Cooling salads, fruity ice cream sundaes and tropical fruit skewers – summer fruits can be incorporated anywhere! Take advantage of the delicious fruits available this summer to increase your child's fruit intake. There are many ways to seamlessly incorporate fruit in their diet, without it seeming like a chore.
Mango Salsa
Include the King of Fruits next time you make a classic salsa. Keep the rest of your ingredients the same – finely diced onions, tomatoes, cucumber, coriander and a squeeze of lime. Change it up by adding finely diced mangoes and stirring it through the salsa. The mango adds a sweet kick which is toned down by the addition of lemon juice and salt to the salsa.
Fruit Skewers
Fruit skewers are highly versatile as you can use any fruit you like! Create fresh combinations by skewering fruit of your choice on to wooden or bamboo skewers. You can make these skewers as a light snack between meals or as a healthy end to a decadent meal. Play around with different textures and flavours to pack in as much character as you can into one skewer. Couple harder fruits such as apples which softer ones such as watermelon to keep things interesting.
Grilled Pineapple with Chocolate Sauce
Cut your cleaned fresh pineapple into large chunks and skewer two on to a wooden or bamboo skewer. Make sure the skewer has been soaked for at least half an hour in water to prevent it from burning. Sprinkle the skewers liberally with brown sugar and then pan sear them on a hot frying pan till the sugar melts and carmelizes.
You can serve these warm with an easy chocolate sauce. Heat a cup of cream on the stove till warm. Stir in two cups of chopped chocolate into the cream till it has melted. It's as easy as that! Plate up your skewers with small dip bowls filled with the chocolate sauce.
Watermelon and Mint Salad
A refreshing addition to any menu is a simple watermelon and mint salad. Toss together cubes of watermelon with freshly torn mint leaves to add an extra twist. For those who are feeling adventurous, another interesting addition is fresh feta cheese. If you're not a fan of the salty cheese, finely crumbled cottage cheese is also a wonderful alternative. This is great served as a starter or even as part of the main course.
