Rainy days are upon us and with them come chilly weather and sniffly noses. At a loss for what to cook on these dreary days? Here are few healthy yet delicious recipes to keep your children and yourselves toasty and warm.
A lifesaver while making noodle bowls are stock cubes. Available in a variety of flavours – be it vegetarian or non-vegetarian, they amp up the flavour of your broths and add another dimension to your noodle bowls.
These bowls are easy to make as you can add whichever vegetables and/or meats you enjoy, along with freshly boiled noodles. Heat water and add a stock cube based on instructions given. Add julienned vegetables as per your taste or meat, if you so please. Once your vegetables and meats are cooked, add the noodles and boil as per the package instructions.
These noodle bowls are diverse and delicious. Based on what your child enjoys, each bowl can be tweaked based on preferences. They can be topped with crispy fried onions and garlic, fresh diced spring onions, herbs such as mint, basil and coriander or even sliced pieces of boiled eggs
You can choose between flour noodles, egg noodles or ones made of rice- based on your own taste. Vermicelli rice noodles are a great alternative if you want the noodle bowl to be light yet filling.
Going with the 'toasty' theme of this post, here are a few crunchy, gooey and mouth-watering toasted sandwiches you can try this monsoon
Add a dash of greens to your toasted sandwiches with some wilted spinach. Wilt a handful of spinach in boiled water, blanched it for 2 minutes, before removing it and squeezing out excess water. Roughly chop the spinach and stir it together with seasoning and grated cheese. Sandwich the mixture between two slices of bread before toasting it on a frying pan or sandwich grill.
A yummy alternative to the same old grilled cheese sandwich is a filling of crumbled cottage cheese, diced onions, diced red and green peppers and seasonings. This type of filling works great in a closed sandwich – which can easily be made with a stovetop sandwich grill. You can also add a grated boiled egg to make the sandwich more filling and nutritious. Finely grated vegetables can also be added to the cottage cheese to hike up the nutritional value of the snack.
