Sandwich Caterpillars

Making sandwiches for large groups of children can always be a daunting task and layering and slicing individual sandwiches can become exhausting. This an easy recipe for a light lunch or a children's birthday party.

These ingredients are just suggestions and fillings for the sandwiches can be varied as per your taste and personal preference.

INGREDIENTS

  • 1 long garlic loaf or soft baguette
  • 1 head of lettuce, separated and washed
  • 3 tomatoes sliced thinly
  • 2 cucumbers peeled and sliced thinly
  • 6 cheese slices
  • 4 tablespoons of sandwich spread or mayonnaise
  • 2 olives
  • Shredded green and purple cabbage to serve

METHOD

  • Slice the garlic loaf across the middle to make two equal flat slices for your sandwich.
  • Spread both halves with mayonnaise or sandwich spread.
  • On the lower half, layer the sliced the cheese and then leaves of lettuce.
  • Following this, layer tomatoes and cucumber, finishing with another layer of lettuce.
  • The lettuce on top prevents the sandwich from getting soggy with the moisture from the tomatoes.
  • Once completed, place the top half of the bread on the sandwich.
  • Using a serrated knife, cut the sandwich into equal portions. If need be, push toothpicks into the individual sections to hold them in place.
  • On a large platter, scatter the green and purple cabbage and placed the sandwich pieces on top.
  • Maintain the baguette shape while arranging it to give it the appearance of a large caterpillar.
  • If possible, curve the alignment of the sandwich gently to make it more caterpillar-like.
  • Slice an olive in half and place both halves in the position of the eyes on the head of the caterpillar. Secure with toothpicks if need be.
