Immunity Boosters

Carrots, onions, tomatoes and garlic all contain vitamins, minerals and antioxidants which help in boosting immunity. At a time when health is of the utmost importance, try your hand at making the soup below. It's light, delicious and loaded with healthy veggies and delicious spices. It doesn't involve much prep and is made in a pressure cooker to cut down cooking time.

Carrot Tomato Soup

  • 1 large carrot or 2 medium sized carrots
  • 2 large tomatoes
  • 1 large onion
  • 4-5 cloves garlic, peeled and chopped
  • 1/2 tsp cumin powder
  • 1/4 tsp cinnamon powder
  • 1/4 tsp fresh ground black pepper
  • salt to taste
  • 2 tsp olive oil or half butter/half oil
  • cream for garnishing
  • finely chopped coriander or mint for garnishing

Instructions to make immunity boosters soup -

  • Peel, wash and quarter the onions.
  • Wash and peel the carrot and cut it into chunks
  • Wash the tomatoes and quarter them.
  • In a pressure cooker, heat the olive oil or butter and add the onion and garlic. Cook for 5 minutes or until the onions are translucent.
  • Add the tomatoes and carrots, along with the cumin, cinnamon, pepper and salt. Cook for an additional 5 minutes on high heat.
  • Add 3 cups of water to the pressure cooker and bring to a boil
  • Close the lid of the cooker and cook on a medium heat for 3 whistles.
  • Allow the steam to subside on its own and open the lid.
  • Allow it to cool completely before using an immersion blender to blend it to a fine liquid.
  • Check the consistency of the soup and simmer it for a few minutes if you find it too thin.
  • Transfer to individual bowls and garnish with a sprinkle of fresh herbs and a drizzle of cream.
